A: Roasting coffee produces chemicals that, when inhaled, can cause serious, irreversible lung damage. The chemicals are released into the air in greater concentrations when the coffee is ground and during packaging. And, the chemicals build up in containers where coffee is stored after roasting.
Roasting coffee beans releases a chemical called diacetyl, which is safe to eat but can be toxic if inhaled. An investigation found levels of diacetyl were four times higher than the safe limit in some roasting plants
Though its been said the roasting process destroys pesticides, research now suggests that these chemicals actually penetrate the green coffee bean. Because of this, roasting often fails to eradicate the contamination, which can result in pesticide residue in coffee even after it’s been brewed.
