Four 8-ounce (237-ml) cups of prepared coffee (1.5 ounces/42 grams of ground coffee) per 5 gallons (19 liters) of beer is a good starting point. You can always add more later. Like coffee, chocolate is a natural accompaniment to stout.
I just finished a stout with cold brewed coffee. I actually used 1 gallon of cold brew coffee to 4 Gallons of beer at bottling. It seems to be a good ratio. No beans or grounds were used directly with the beer. I wanted to make sure that I liked the coffee before, I added to the beer.
1 oz/ gallon of very coarse ground beans in secondary for a coffee heavy type beer, or 0. 5 oz/ gallon for a beer with more balanced coffee. Never really been a fan of doing the cold press and adding it, as I’ve always felt it dilutes the beer a fair amount and is more insipid and a more likely source of infection.
I put together a strong stout and was wondering what your guys’ experience was with adding ground coffee (in a steeping bag) into secondary. I did some calculations and figured I’d need about 5.5 cups of coffee ground for a 4-5 galon batch for coffee making.

· Have never brewed a milk stout or added lactose to a boil, but very surprised that the tasters couldn’t distinguish between the lac+ & – beers. Use lactose to back-sweet my ginger beer & then it has a huge impact on mouthfeel – much more pillowy and soft – and this at 0.5%.
· The beer has scents that are not just chocolate but coffee and even a little kirsch, almost a Black Forest gateau but not quite.
